Before joining the ECS team, Mimi taught 11th and 12th Grade British Literature & World Literature at North Pocono High School in Moscow, PA. In her spare time, she likes to read, sew, crochet, make things, play piano, hang out with her animals and bake lovely treats. Mimi likes both coffee and tea. She has one black lab retriever mix and two polydactyl cats. Mimi has traveled around Italy, Sardinia, England, France, Spain, Germany, Austria, Switzerland, South Korea and has been on two U.S. cross country car trips.
